Spicy Potato Wedges (Serves 1)

What You'll Need

Either 1 medium sized potato or 2 small potato’s

Salt & Pepper to taste

Dried red chilli flakes

Your hot sauce of choice

  1. Take the potato(s) and wash thoroughly with the skin on.
  2. Halve the potato(s) and then cut the halves into ‘wedges’.
  3. Place in a pan and cover with cold water.
  4. Put the pan on a very high heat and allow water to come to boiling point. In the meantime, pre-heat a baking tray in the oven to Gas Mark 6-7.
  5. Let the wedges continue to boil on a high heat, until they are parboiled.
  6. Now turn off the heat and drain the wedges immediately into a colander.
  7. Take the pre-heated baking tray from the oven and spray some ‘One Cal’ spray or add a drop of oil of your own choice and spread it across the baking tray to help avoid the wedges from sticking to the tray.
  8. Now place the part-cooked wedges on the baking tray – you’ll hear a sizzling noise!
  9. Sprinkle salt and pepper and drizzle some hot sauce over the wedges (all to your own taste) and toss until they’re coated.
  10. For an extra kick, you can add some dried chilli flakes and finally spray some ‘One Cal’ over the wedges before putting in the middle of the oven on Gas Mark 6-7.
  11. Continue to turn the wedges every 10-15 minutes until they are fully cooked through – should be done in 30-35 minutes.
  12. To check they are fully cooked, pierce with a sharp pointed knife which should easily go through the wedges.
  13. The wedges should be fluffy in the middle but crisp on the outside…enjoy your healthy spicy wedges!

 

Meal Idea: Can have with some plain chicken, salad and a mint yoghurt dressing!
